Chipotle Adds New Plant-Based Cilantro-Lime Cauliflower Rice To Menus Nationwide

As the trend of North Americans adding plant-based options to their diet increases, Chipotle continues to give fans more ways to make plant-based food part of their everyday life.

Chipotle announced today that its new Cilantro-Lime Cauliflower Rice is officially available at U.S. and Canadian restaurants nationwide for a limited time.

Cilantro-Lime Cauliflower Rice is a plant-based rice alternative that consists of freshly grilled, riced cauliflower, finished with hand-chopped cilantro, lime, and salt.

The new rice option, which is compliant with Keto, Paleo, Vegan, Vegetarian, and Whole30 diets, has only 4 grams of net carbs per serving and is very low in calories. According to a press release, it puts a delicious healthy twist on the chain’s classic white rice recipe “by using the same fresh cilantro and lime ingredients, and similar culinary techniques.”

The new plant-based Cilantro-Lime Cauliflower Rice costs an extra $2 and is available in-restaurant and through the chain’s mobile app, website, and third-party delivery partners.

Also, through January 11, 2021, Chipotle is waiving the delivery fee on any app or online order of $10 or more that includes the plant-based Cilantro-Lime Cauliflower Rice.

Additionally, and to make the launch even more exciting, the chain will be offering the following four new Lifestyle Bowls as part of its digitally exclusive menu:

  • The Whole30 Bowl features Cilantro-Lime Cauliflower Rice paired with chicken, fajita veggies, fresh tomato salsa, and guac. Just take note that this option is only available in the US.
  • The Keto Bowl features Cilantro-Lime Cauliflower Rice, chicken, tomatillo-red salsa, cheese, and guac.
  • The Vegetarian Salad Bowl consists of Supergreens lettuce blend and Cilantro-Lime Cauliflower Rice with black beans, fajita veggies, fresh tomato salsa, and guac.
  • The Vegan Bowl includes Cilantro-Lime Cauliflower Rice, plus black beans, sofritas, fresh tomato salsa, roasted chili-corn salsa, and romaine lettuce.
